Cattle

Whether raised for beef or milk, cattle have become one of the most ubiquitous animals of the North American farm.
Plate 2. Andrew Chandler, a junior at College of the Ozarks with a double major in animal science and ag-business, has a lifetime of experience in raising cattle. Originally from Michigan, Chandler has lived in the Joplin area since 2000.
In fact, it’s hard to get any more American than a milkshake or a hamburger. Much like apple pie, however, cattle were unknown on this continent prior to European conquest. A testimony to change.
Holsteins for milk, Jerseys for cream, Angus for beef, Herefords for all three. Zebu for heat. Longhorns for the rangy, craggy lands of the Southwest or the deep tangle of Texas brush land.
It was post-Civil War cattle drives that created the icon of the American cowboy.
We’ve a lot of history embodied in something as simple, and simply iconic, as a lowly herd of cattle grazing a hillside.
