Mix together and allow to cool…
1/4 cup cocoa
3/4 cup boiling water
Sift well…
1 3/4 cups cake flour
1 3/4 cups sugar
1 1/2 teaspoon baking soda
1 teaspoon salt
Make a well in the flour mixture. Add…
1/2 cup oil
7 egg yolks
Cocoa-water mixture
1 teaspoon vanilla … and beat until smooth.
Beat 7 egg whites with 1/2 teaspoon cream of tartar until stiff peaks form. Gently fold into flour-cocoa mixture with a rubber spatula. Bake in an ungreased pan on the lowest rack at 325°F until firm.
