Or come in so many varieties.<\/p>\n<p>Cornbread does.<\/p>\n<p>A staple of not only the Ozarks but rural America of a generation ago, cornbread is part of our cultural heritage.<\/p>\n<p>There\u2019s true Southern cornbread, scarce on sugar and baked in an iron skillet, well-seasoned with bacon grease.<\/p>\n<p>There\u2019s Yankee cornbread, heavy with eggs, butter, cream and often, copious amounts of sugar. Truly a cake if there ever was one! <strong>Recipe is below.<\/strong><\/p>\n<p>There\u2019s cornbread crumbled in a tall glass of cold milk as the evening meal after a hot summer day.<\/p>\n<p>Fresh, hot cornbread, topped with butter and a generous helping of sorghum molasses.<\/p>\n<p>Or cornbread smothered in ham and beans on a cold, January night.<\/p>\n<p>War Eagle cornbread is an excellent example of the Southern version.<\/p>\n<p>The recipe calls for just a small amount of honey for sweeten\u2019 and bacon fat (or shortening).<\/p>\n<p>Use bacon fat and a cook the cornbread in a cast-iron skillet. The difference is worth it.<\/p>\n<p>Also make sure you have plenty of real butter and some good sorghum on hand when you get it out of the oven.<\/p>\n<p>You\u2019ll be tastin\u2019 a very fine bit of history.<\/p>\n<p><span class=\"plate\">May 18, 2009<\/span>[\/vc_column_text][vc_separator][vc_column_text]<\/p>\n<div class=\"recipe\">\n<h1>Arkansas Corn Bread<\/h1>\n<h2>(Pictured Above)<\/h2>\n<ul>\n<li>1 1\/2 cups stone buhr ground yellow or white cornmeal<\/li>\n<li>3\/4 cup white flour<\/li>\n<li>2 1\/2 teaspoons baking powder<\/li>\n<li>1 tablespoon honey<\/li>\n<li>1 1\/2 cups sweet milk<\/li>\n<li>1 egg<\/li>\n<li>1 tablespoon bacon fat or shortening<\/li>\n<li>1 teaspoon salt<\/li>\n<\/ul>\n<p>Melt fat in a 10-inch cast-iron skillet while preheating oven to 375\u00b0F. In medium size bowl, stir together cornmeal, flour, baking powder, and salt. Stir in milk, egg, and honey. It is also home to a fall craft fair of extraordinary proportions.<\/strong><\/p>\n<div class=\"recipe\">\n<h1>Yankee Corn Bread<\/h1>\n<h2>from Joshua Heston<\/h2>\n<ul>\n<li>1 cup cornmeal<\/li>\n<li>1 cup wheat flour<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1 cup sour milk*<\/li>\n<li>1 egg<\/li>\n<li>1\/2 cup sugar<\/li>\n<li>1\/2 cup butter, softened<\/li>\n<\/ul>\n<p>Preheat oven to 375\u00b0F. Combine dry ingredients and cream with butter.
